We grow eggplants on two sites in 's-Gravenzande. We start the growing cycle just before Christmas and the season usually lasts until the first or second week in November when we harvest the final eggplants. I am incredibly proud of where we stand as a family-run company. Growing eggplants still gives me a kick. That, despite extreme weather conditions, you can still ensure good quality and make sure that only the very best quality eggplants leave the company.

YOU SHOULD MAINLY FEEL EGGPLANTS TO ASSESS THEIR QUALITY

Eggplants: the ideal meat replacer

You should mainly feel eggplants to assess their quality. The stalk should be an even colour, without any brown spots. The egg -plant itself should feel firm and heavy. You can still eat less firm eggplants, but it is a sign that the eggplant is slightly older. Egg- plants are low in calories. Vegetarians often use eggplants to replace meat. Eggplants soak up the juices and spices in dishes and are a great way to showcase flavours.
